Native to the reefs of the Indian Ocean and the western Pacific, the black pomfret often grows to 75 cm (30 in) in length. A good source of protein, its lightly-flavoured flesh is mild but not altogether bland and lends itself deliciously to all forms of wet cooking and pan frying. Chefs have to be a little careful while cooking black pomfret, as it flakes easily on the plate.
